Had a box of strawberry cake mix for awhile, finally used it. Felt like experimenting a bit, I blame cooking/baking shows.
Made cupcakes, but with melted butter instead of oil, and substituted half the water for lemon/orange juice. Also grated one lemon and orange and put the zest in the batter. Cut up some strawberries and tossed them in on top. Made a strawberry/cherry sauce like the one I did for the cheesecake awhile back.
Batter consistency was wonderful and spongy, though putting fresh strawberries in may have killed the rise w/ the extra moisture. Taste is good. Rather than putting the sauce on top, I should've cut holes in the middle, but I got lazy. I was also going to make a chocolate ganache, but again, lazy. Might still try the ganache over the weekend, got plenty of cupcakes left.

British Breakfast.png

British styled breakfast with:
- A hash brown.
- spinach.
- American barbequed beans (a substitute for British Heinz baked beans*)
- cooked (from raw) sausages.
- cooked (from raw) back bacon.
- a muffin.
- a fried egg.

All served with the "holy trinity" of red/tomato sauce, mustard and brown sauce.

(* Yes, Heinz baked beans are now manufactured in the UK now, possibly due to them being more popular there than the US - https://en.m.wikipedia.org/wiki/Heinz_Baked_Beans ).

My girlfriend brought some (rather freakish) Christmas-themed cakes from a local bakery).

(And the tea was British "Typhoo" blend, which went perfectly with the food and whilst watching "The Crown" on a Sunday).

You've never had a Full English have you? Those type of beans are a staple of the meal and always has been since they could put beans in a can.

Ironbite-Also was the egg yolk runny?

Christmas dinner in Japan. Smoked turkey legs, stuffing, potatoes, pigs in blankets, spinach, mushrooms, Yorkshire pudding, roasted onions and lotus root, Bisto gravy, Ikea lingonberry jam, etc. We didn't have time nor stomach-space for the dessert, so we'll have the mince pies, Christmas cake and Christmas pudding later.

Also made this before Xmas: simple stew with tomato paste, Italian spices, zucchini, beef broth, ground beef, and pasta topped with cheese.

Tried making carrot cake for the first time, using this recipe. Food processor made quick work shredding the carrots.

WOW this recipe is so good! Pops of juicy pineapple and raisins. Used hazelnuts and almonds since I didn't have walnuts, still has a nice crunch. Dense and moist, nice texture variety. Used premade cream cheese icing to be lazy.
First few bites were so good, I did a happy dance in the kitchen.

Made cuñapé bread today! This is a Bolivian recipe. It's basically a cheese bread. This recipe ended up being a lot easier (and messier) than I thought. The cheese is mixed directly into the flour. The queso blanco I got didn't need shredding, it just crumbled apart.
They're not quite as poofy as the ones from the local Bolivian bakery, but not bad for a first attempt.
