Had a box of strawberry cake mix for awhile, finally used it. Felt like experimenting a bit, I blame cooking/baking shows.
Made cupcakes, but with melted butter instead of oil, and substituted half the water for lemon/orange juice. Also grated one lemon and orange and put the zest in the batter. Cut up some strawberries and tossed them in on top. Made a strawberry/cherry sauce like the one I did for the cheesecake awhile back.
Batter consistency was wonderful and spongy, though putting fresh strawberries in may have killed the rise w/ the extra moisture. Taste is good. Rather than putting the sauce on top, I should've cut holes in the middle, but I got lazy. I was also going to make a chocolate ganache, but again, lazy. Might still try the ganache over the weekend, got plenty of cupcakes left.
